Recipe: Tomato Cucumber Salad
Ingredients:
- 2 cups halved cherry tomatoes
- 1 cup diced cucumber
- 2 tbs fresh basil leaves, cut into thin strips
- 2 tbs olive oil
- 1 tbs balsamic vinegar or lemon juice
- 1/4 cup fresh/crumbling cheese
- salt and pepper to taste
Directions:
In a large bowl, toss all ingredients together and season with salt and freshly ground black pepper to taste.
*Consider adding 1 cup of fresh or roasted corn kernels for a summery twist on a classic salad
