Recipe: Tomato Cucumber Salad



  • 2 cups halved cherry tomatoes
  • 1 cup diced cucumber
  • 2 tbs fresh basil leaves, cut into thin strips
  • 2 tbs olive oil
  • 1 tbs balsamic vinegar or lemon juice
  • 1/4 cup fresh/crumbling cheese
  • salt and pepper to taste
In a large bowl, toss all ingredients together and season with salt and freshly ground black pepper to taste.
*Consider adding 1 cup of fresh or roasted corn kernels for a summery twist on a classic salad
