  • Good news! Australian cheese expert Russell Smith is visiting the Bay Area. He led an outstanding class at ACS last year called Science of Taste. We're hosting him for a similar class on August 2nd from 6-8pm. Bad news: There are only 10 seats available as the session covers a lot of territory and involves many moving parts.

    Here are some of the activities and takeways from the class:

    1. This class will lead you on a journey to discover your own abilities to taste the components of flavor detected on the tongue.
    2. You will also learn just how dramatically a cheese can change in texture and flavor with just minor changes to the recipe.
    3. There will be an in depth discussion on the differences between pairs of four different cheese styles. Cheddar, Swiss, Blue, and Goat Gouda.
