A few die-hard traditionalists are fighting against efficiency, rising costs, the power of mass market appeal and climate change. These old school cheeses and wines often contain long, fascinating histories, made using practices that seem both shockingly laborious and exquisitely beautiful. In this class Bi-Rite Cheese Buyer Jon Fancey and Mister Jiu’s Wine Director John Herbstritt will take you on a journey through a vanishing world.
