Recipe: Not-Your-Mother's Coleslaw

1/2 head red cabbage sliced thin
1/2 cucumber sliced thin
1/2 lb blue lake beans trimmed and chopped into 1/2 inch pieces
1/2 bunch cilantro, chopped
1/2 bunch green onion, chopped
1 shredded carrot
3 tablespoons tahini, almond or peanut butter
3 tablespoons soy sauce
2 tablespoons rice vinegar or lemon juice

Mix all ingredients in a large bowl. Allow 1-2 hours for the cabbage to wilt. Top with your favorite grilled protein, roasted vegetable, avocado, or use as a rice topping.
