1 bunch swiss chard washed and chopped including stems
6 corn tortillas
Directions:
Toss diced sweet potato with olive oil, spices and jalapenos. Roast at 400° for 15-20 minutes until sweet potatoes are soft and start to carmelize around the edges.
Meanwhile, on medium heat add 3 Tablespoons of olive and start caramelizing the sliced onions. Once onions start turning soft and golden brown add your garlic. Being careful not to burn your garlic cook for a few more minutes until the garlic starts to brown. Add in the sliced chard. Cover your pan so that the chard will start to steam and wilt. Stir occasionally to prevent the onions and garlic from sticking.
To assemble,top your tortillas with the onion chard mixture and the roasted sweet potatoes. Finish with your favorite crumbled cheese, sour cream or salsa!
