Cheese Obsessed
Hello cheese lover! For you a cheese class begins with a warm welcome and a glass of wine around the hearth. You’ll meet your instructor and mix with some of your fellow students before finding your seats in our classroom. Then your expert and charming instructor will guide you through a two-hour tasting of artisan cheeses. You’ll learn about the history and uses of the cheeses and how to properly taste them. All tastings are accompanied by thoughtful pairings of fresh bread, fresh fruit, preserved fruit, and wine or beer (wine and beer kindly provided by Stable Café). We also offer classes in cheesemaking, cooking-with-cheese, happy hours, cheese movie nights, and an occasional dinner with the cheesemaker. Keep your eyes on our schedule or, better yet, subscribe to our mailing list. That way, you’ll be the first to know when exciting things come up. Schedules are released four times per year at the end of February, May, August, and November.
Cheese Pro
Welcome cheese master! For you we have classes that will broaden your cheese horizons as well as help you when you are ready to launch your own venture in cheese. Currently we offer our three-day intensive cheesemonger program three times a year. Twice yearly, we fly in Rich Rogers of Scardello in Dallas to teach an all-day “how to open a cheese shop” intensive. And there are more specialized programs and training classes coming soon. Stay tuned! All classes must be registered for in advance.
