The Wedge and Wheel opened in 2013 by Three-Day Intensive attendee and cheesemonger Chris Kohtz. It's a cheese shop that has "cut-to-order" cheese and salami! Chris went from cheese enthusiast and blogger to cheese shop owner in a three year journey that took him to France and eventually to San Francisco to take the professional program.
